Stockfish are unsalted fish that are naturally dried by sun and wind on the fish racks during the period January- April.
J.M. Langaas has traded stockfish since the business was established in 1905 and produces mainly stockfish of “Skrei”.
Humidity , sun, weather and wind will give the stockfish special character. No season are the same. Just as it is for good wine.
This is an exclusive and historical product, produced in the same way as for thousands of years ago.
The fish racks in Sund are sheltered for the worst winter storms. Only exposed to fresh air.
The mild climate here, in the middle of Lofoten and above the arctic circle, provides good drought that gives the stockfish a wonderful and distictive flavor.
